(Serves Two)
INGREDIENTS 6 large chicken wings 1 mango 1 pineapple 1 diced orange 1/2 cup jerk seasoning 5 fresh strawberries 1/4 cup soy sauce 1 whole squash and zucchini Salt and pepper Seasoning salt Fresh salad mix leaves Juice of 1 whole lemon Olive oil Fire up the grill. Prepare 1/4 cup of soy sauce, 1/2 cup jerk seasoning, a pinch of black pepper, a pinch of sugar, a pinch of salt, whisk in a bowl and rub on the chicken. Let soak in marinade for three hours. Marinade is important.
Slice squash and zucchini long ways into 1/2-inch thick slices and rub with olive oil and a dash of garlic salt or your favorite spice. Take a fresh pineapple slice off the skin and cut into rings. Set aside. Take a mango and dice into small 1/2-inch cubes; the smaller the better. Take five fresh strawberries and dice into pieces. Slice and cube orange, mango and strawberries. Spin in bowl with salad mix and place in refrigerator to cool.
Take two tablespoons of butter, 1/2 cup sugar, two tablespoons of mustard, dash of salt, 1/4 cup of soy sauce, juice of one lemon and a dash of jerk seasoning. Melt in a pan and cook to a thick glaze. Set to cool and use as a glaze for chicken once the chicken is almost ready to come off the grill.
Scrub grill with grill brush and wipe down with vegetable oil to keep chicken from sticking to it. Once grill is hot, place the chicken and lay six pineapple rings on the grill. Once chicken is grilled about eight minutes, flip and put squash and zucchinis on the grill. Once chicken is almost done, brush prepared glaze onto chicken and grilled vegetables. This will burn and caramelize onto the chicken and vegetables, so be careful and enjoy!
